METHOD:

Step 1: Prepare the base

Heat 4 tbsp vegetable oil or butter in a pan over medium heat. Add 2–3 finely chopped garlic cloves and sauté until fragrant. Stir in 1 finely chopped medium red onion and cook until golden brown. Add 150g canned chopped tomatoes and simmer until thickened.

Step 2: Cook the Main Ingredient

Add 600g meat or vegetables and cook until browned. Season with salt. Mix 1 sachet (50g) Fiery Madras spice mix with 100ml water, then add it to the pan. Stir well.

Step 3: Simmer & Serve

Pour in 300ml coconut milk and bring to a gentle simmer. Cook for 5–7 minutes until thick and creamy. Serve hot with rice, naan, or bread.
